hGC Citrus Curried Chicken and Spinach
3.52 oz. (100 grams) chicken breast, cubed
½ cup chicken broth
1 garlic clove, minced
2 cups spinach
2 teaspoons onion powder
1 teaspoon curry powder
¼ teaspoon salt
¼ teaspoon pepper
1 lemon or lime
Sauté garlic and chicken in chicken broth. Add in onion powder, curry powder, salt and pepper. Squeeze in the juice from ½ of the lemon or lime. Continue cooking until chicken is cooked thoroughly. Add spinach and stir until wilted. Squeeze juice from the remaining lemon or lime onto the meal just before serving.
Recipe Note: Lemons are traditionally used on the hCG diet but most dieters find that lime is preferable in this recipe. Lime is an acceptable substitute.
