Is Almond Flour Safe on the HCG Diet?

Some want to know if they can use almond flour on the hcg diet? Almond flour has been a favorite for people who want to eat a gluten free diet. But is it safe for the hCG dieter? The answer to that is that it is OK on phase 3 of the hCG diet. During hCG phase 3, it is OK to start eating some fats again, but still no starch is recommended. So almond flour fits in here perfectly. Here are a few recipes I have found on the Internet that are OK for the hCG phase 3 using almond flour.

Almond Biscuits/Cookies:
1 tbsp coconut flour
1 tbsp almond flour
3 tbsp coconut oil
.25 tsp baking powder
pinch salt
.5 tsp stevia or other sweetener
2 eggs
.5 tsp almond essence
whipping cream or milk to mix

Mix dry ingredients together
Add oil and eggs
Coconut flour absorbs the liquid very quickly so add cream or milk until a soft dropping consistency is reached.
Drop spoonfuls onto a non-stick baking sheet
Cook at 400 degrees for about 12 minutes or until golden brown and crispy
Makes about 9 patties.

1-minute Muffin
1/4 cup flax meal or almond flour
1/2 teaspoon Baking Powder
1 packet Splenda
1 teaspoon Cinnamon
1 Egg
1-2 teaspoons Butter

Mix the dry ingredients in a large coffee cup. Add egg and butter; mix well. Microwave for 50-seconds to 1-minute. Muffin pops right out.
You can make your own almond flour by grinding some almonds in a small coffee grinder

Almond loaf:
3 1/2 cups almond flour
3 eggs
1/4 cup melted butter
1 tsp. baking soda
1 cup yogurt
1/4 tsp. salt

Mix together all ingredients, transfer to greased loaf pan. Bake at 350 F (180 C) for about 45 minutes. you’ll have to test to see when it’s done. Let it cool for quite a long time before removing from pan so it doesn’t flop.

Low Carb Almond Sugar Cookies
1-1/4 cup almond flour
1 cup Splenda
1/4 cup butter, at room temperature
1 large egg
1 teaspoon vanilla
additional Splenda, for decorating

Pre-heat oven to 350 F. Line baking sheets with parchment paper or a non-stick baking mat. Stir together flour and Splenda. Blend in butter, egg and vanilla until well mixed. Form into 1-inch balls on a cookie sheet and flatten each with a fork. Sprinkle with additional Splenda. Bake for 8 minutes or until set but not brown. Allow to cool for 2 minutes on baking sheet then remove to wire racks to cool.
